Elaichi Chai (Cardamom Chai)
What you’ll need:
1 1/2 cups water
1 1/2 cups whole milk
7 teaspoons natural sugar
1/2 teaspoon decorticated (pod removed) cardamom seeds or 10 green cardamom pods
2 teaspoons CTC black tea (or more)
Cardamom spice is the key to this simple chai tea latte. Up to twice as much black tea can be used for a potent, authentic Indian chai. Strong, robust CTC black tea is traditionally used in making chai, but you can use other types of tea as well.
In a medium pot, add water, milk and sugar and place on medium-high heat. Finely grind cardamom seeds in a spice grinder or mortar and pestle. When pot comes to a boil, turn off heat, add tea and cardamom, gently stir and cover. Steep 5 minutes. Strain through a fine-mesh strainer and serve.
Or Use Quick Chai Setting:
